Hot Blueberry Walnut Cereal

Ingredients (makes 2 servings):

2 cups quinoa, cooked

1 1/3 cup blueberries, fresh or thawed if frozen

8 Tbsp chopped walnuts

1 tsp cinnamon

2 cups low-fat or skim milk


In a microwave safe bowl, cook Quinoa about 45 seconds until warm. Stir in cinnamon. Top with blueberries, walnuts and milk. Divide into 2 bowls.
