Mediterranean Chickpea Salad

Serves 2

Prep time: 15 minutes

Ingredients:

8 cups leafy greens (spinach, arugula, baby kale)

1 cucumber, sliced

½ cup roasted red bell peppers

½ cup kalamata olives

4 Tbsp feta cheese

1 cup chickpeas

2 Tbsp Greek dressing or Balsamic vinaigrette

½ cup fresh basil leaves

Black pepper, to taste

 

Directions:

Slice cucumber.  Mix all ingredients together and serve.

Nutrition info per serving:  414 calories, 40 gm carbs (9 gm fiber, 7 gm sugar), 23 gm fat (7 gm sat, 5 gm poly, and 3 gm mono), 17 gm protein, *1407 mg sodium, 5.8% DV iron, 1389 mg potassium, 662% DV Vitamin A, 151.3% DV Vitamin C.

*Amount of sodium when using canned red bell peppers.  To cut 825 mgs of sodium, roast fresh red peppers in your oven instead.
