Fresh Pico de Gallo

Ingredients

1 ripe tomato, seeded and chopped

1 onion, finely chopped

1 jalepeño, seeded, chopped*

2 Tbsp chopped fresh cilantro

1 lime

Combine all ingredients except the lime in a medium sized bowl. Cut the lime in half and squeeze juice, to taste, over the mixture. Stir and enjoy! Eat with corn chips, use as a topping for tacos, burritos or on scrambled eggs or in egg burritos.

*Removing the seeds and the white membrane from the green flesh of the jalepeño decreases its heat significantly. If you want more heat, leave more of the white membrane.
