Peach and Ricotta Toast

Serves: 1

Toast one large slice sour dough bread.  Spread ¼ cup part-skim ricotta cheese on the toast.  Top with a thinly sliced peach, pear, or apple.  Sprinkle ribbons of freshly sliced basil leaves over the fruit and drizzle with 1-2 tsp honey for the finishing touch.  Serve with an 8 oz glass of low-fat milk.
