8 ounces mozzarella
1 medium beefsteak tomato
4-6 fresh basil leaves
½ – 1 Tbsp olive oil
Slice mozzarella and tomato into 6 slices. Roll basil leaves together and slice into fine ribbons. In a small dish, alternate slices of cheese and tomato. Sprinkle ribbons basil over the top and drizzle lightly with olive oil.
