Basic Vinaigrette

Servings:  6 (about 3/4 cup)

1 Tbsp Dijon mustard

1/4 cup balsamic vinegar

1/4 tsp salt

1/8 tsp pepper

1/2 cup extra-virgin olive oil

Add Dijon mustard to a shaker, then add vinegar, salt, and pepper.  Screw on the lid and shake until well mixed.  Next, add the oil and shake again.

Tip: Use within one week on anything and everything like brown rice or quinoa, roasted vegetables, leafy greens, pasta salads, or as a dip for a hearty, crusty bread.
