Black Bean and Chipotle Chowder

Serves 8 – 1 cup servings

Prep:  1 hr 45 minutes (includes baking the sweet potatoes for one hour)

Ingredients:

1 tsp vegetable oil

2 small onions, diced

3 carrots, sliced

4 celery stalks, sliced

1.5 tsp minced garlic

1 jalapeño pepper, seeded and finely chopped

1 Tbsp unsweetened cocoa powder

1 Tbsp ground chipotle powder

1 tsp cumin

3 medium sweet potatoes, diced

1 lb fresh tomatoes, diced

4 ¼ cup sodium free vegetable stock

28 oz can black beans, drained and rinsed

Zest and juice of lime or about 2 Tbsp

Fresh cilantro
