Chicken Quinoa Salad

Makes 2 servings

Ingredients:

6 oz cooked chicken, cubed

1 cup cooked quinoa

½ cup spinach

½ cup carrots, shredded

4 Tbsp bleu or feta cheese, crumbled

2 Tbsp dried cranberries

2 Tbsp chopped walnuts

2 Tbsp Balsamic vinegar

2 tsp olive oil

Directions:

Prepare all ingredients. Mix together.
