Serving: ½ pita pocket
Ingredients:
1 15 oz can of garbanzo beans, drained and rinsed
2 Tbsp of tahini
1 Tbsp olive oil
1-2 tsp lemon juice, to taste
1 tsp ground cumin
1 tsp garlic powder
1 tsp paprika
Pinch of salt and pepper
Mix all ingredients together, adding more or less spices to make it how you like it. Fill ½ pita pocket with 2/3 cup bean mixture, ½ cup spinach or lettuce leaves, and 4-6 slices of cucumbers.
