Maple Dijon Apple Cider Vinaigrette

Makes ½ cup

Ingredients:

1/3 cup extra virgin olive oil

¼ cup apple cider vinegar

2 tsp maple syrup

1 Tbsp Dijon mustard

½ shallot, minced

¼ tsp fine sea salt

¼ tsp ground black pepper

 

Directions:

Combine all ingredients in a glass jar with a lid or a salad dressing shaker.  Shake vigorously until emulsified.

Serving size (2 Tbsp):  228 calories, 13 gm carbs (Fiber 2 gm, Sugar 7 gm), 19 gm fat (3 gm sat, 13 gm mono, 2 gm poly), 218 mg sodium

Since this dressing is more calorie dense, I like to mix a batch and pour it over a big grain-based salad with 6-8 servings.  It adds great flavor and moisture to the salad and lightens the calories by increasing the number of servings.
