Servings: 6 – 8 (makes about 3/4 cup)
1/3 cup red wine vinegar
2 tsp fresh squeezed lemon juice
1 1/2 tsp minced garlic
1 tsp sugar
2 tsp dried oregano
1/2 cup extra-virgin olive oil
In a shaker, mix together all of the dressing ingredients except for the olive oil. While whisking, stream in the olive oil. Season the dressing with salt and pepper to taste.
This dressing is one of my favorites! It brightens so many dishes and goes great on leafy greens, pasta salads, and rice. One of my favorite ways to use this is over a bowl with brown rice, grilled chicken breast and roasted or grilled vegetables.
